I haven't posted lately about what we're eating for dinner. so i thought i would put up a couple that we have had and loved and were super easy.
creamy fusilli (rotini) with yellow squash and bacon
(some adjustments i made: i used 8 slices of bacon cause there's no other meat in it! I also added some of the asiago cheese directly to the sauce, as well as topping it off with the cheese.)
pot sticker salad with snap peas
(some adjustments i made: i used fresh pot stickers - our grocery store is pretty awesome- and i stuck a side of brown rice in there. even the kids liked this after they got over the shock of "what is that?"
honey chicken skewers with grilled corn salad
all around yummy - the kids loved the skewers and no one tried to poke anyone with one, yet.
warm spinach salad with grilled sausage
we served this last sunday evening when we had some friends over. it was a new recipe to us, and it was soooo good! definitely will do this one again. we just served it with some artisan bread.

This week I made:
Linguine with Asparagus, Parmesan, and Bacon - I used turkey bacon. It was good but was missing something, not sure what. I'll try it again.
Fettuccine with Shrimp and Portobellos - But made it with chicken (made it with shrimp once before)...this time I added three portobellos - it was much better, and I added spinach. John really liked it.
Last night we had the deli turkey salad out of Real Simple... good, fast, and easy.
